Apples are also a fiber-rich superfruit. A medium-sized apple contains 4.4 grams of fiber. Aside from cauliflower and apple, this soup contains high-protein lima beans.

Ingredients for 4 servings:

Cauliflower soup:

  • 2 cups (500 ml) of cashew or almond milk, unsweetened
  • 1 1/4 cups (300 ml) of water
  • 800 g (1 lb., 12 oz.) of cauliflower
  • 200 g (7 oz.) of cooked butter (lima) beans
  • 1 yellow onion, diced
  • 2 garlic cloves, crushed
  • Olive oil, for frying and to serve
  • 1 tablespoon of freshly squeezed lemon juice
  • Salt to taste

Curry-fried apple:

  • 1 apple, peeled, cored and diced
  • 2 teaspoons of curry powder
  • 3/4 cup (100 g) of pumpkin seeds
  • Olive oil, for frying
  • Salt and freshly ground black pepper to taste

Preparation:

  1. Fry the onion and garlic together in oil in a large saucepan for at least five minutes or until soft over medium-low heat.
  2. Remove the green leaves from the cauliflower, cut it into smaller pieces, then set aside. Cut the rest of the cauliflower into small chunks.
  3. Add the cauliflower, beans and nut milk into the saucepan. Add enough water to cover the contents, cover the saucepan and cook for around 15 minutes or until the cauliflower is soft.
  4. Cook the apple in a frying pan or skillet with a bit of olive oil. Add the cauliflower leaves you set aside earlier. Sprinkle curry powder over the mixture, then fry until soft. Add the pumpkin seeds and keep everything warm. Season with a bit of salt and pepper.
  5. Pour a little milk from the saucepan in step three into a bowl. Blend the soup until it is smooth, then pour the milk back in and dilute with milk or water to your preferred consistency. Season with lemon juice and salt.
  6. Top the cauliflower soup with curry-fried apple and a drizzle of olive oil before serving.
