Different cuisines use different types of chili peppers. Mexican cuisine, for example, has jalapeno and habanero peppers. Meanwhile, Indian cuisine has its own unique red and green chili peppers, often used ground.

If you like your food spicy, this recipe is for you. This homemade fresh chili sauce is simple enough to make, even in large batches, for those dedicated spice lovers out there.

Ingredients:

  • 10 fresh chili peppers
  • 2 garlic cloves
  • 1/2 cup extra-virgin olive oil
  • 1 Tablespoon white wine vinegar
  • Salt

Preparation:

  1. Cut the chili peppers’ stems off and chop the garlic.
  2. Pulse the chili peppers and garlic in a food processor.
  3. In a pan, heat the chili and garlic mixture for 5 minutes.
  4. Pour in the olive oil and cook the mixture for 25 minutes.
  5. Set aside to cool. Once cool, mix in the vinegar. Season with salt.
  6. Pour the chili sauce into an airtight container and keep it refrigerated.

Sweet chili jam

Believe it or not, chili peppers are also great for making sweet jams. You can then spread them on toasts and biscuits or add it to casseroles for a zap of flavor.

Ingredients:

  • 7 oz canned tomatoes
  • 5 red chili peppers, de-stemmed
  • 4 red bell peppers, seeded and chopped
  • 4 garlic cloves, peeled
  • 2 cups golden caster sugar
  • 1/2 cup red wine vinegar
  • 1 2-inch piece of ginger, peeled

Preparation:

  1. Using a food processor, pulse the peppers, ginger, garlic and tomatoes.
  2. Pour the mixture into a saucepan, then add the sugar and vinegar.
  3. Cook the mixture over high heat. Bring it to a boil.
  4. Skim off the orange scum once it floats to the top.
  5. Reduce the heat to a simmer and cook for 1 hour.
  6. Once the jam has thickened, pour it into a glass jar.
  7. Let the mixture cool before putting on the lid. Keep refrigerated.

Chili-chocolate truffles

Instead of snacking on processed candies, grab these truffles instead! Made with dark chocolate, coconut milk and cayenne pepper, these treats are brimming with nutrients, antioxidants and flavor.

Ingredients:

  • 10 oz dark chocolate (80% cocoa or higher), chopped
  • 1/2 cup full-fat coconut milk
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper

Preparation:

  1. Line a dish or plate with parchment paper. Set aside.
  2. Melt the dark chocolate in a saucepan over low heat.
  3. Stir in the coconut milk and add sea salt to taste.
  4. Pour the mixture into a bowl. Chill for 2 hours.
  5. Once firm but still pliable, create the balls.

  7. Refrigerate them for 2 to 3 hours.

Stuffed poblano peppers

Stuffed peppers are a classic comfort food that’s both nutritious and delicious. But instead of using plain old bell peppers, spice it up and use hot poblano peppers instead.

Ingredients:

  • 8 oz cream cheese, softened
  • 4 oz shredded cheddar cheese
  • 4 poblano peppers
  • 1 Tablespoon chili powder
  • 1/2 Tablespoon ground cumin
  • 1 teaspoon garlic powder
  • Chopped cilantro
  • Salt and pepper
  • Juice of 1 lime
  • Olive oil

Preparation:

  1. Preheat the grill to medium-high heat.
  2. Oil the poblano peppers. Grill them for 10 minutes, flipping throughout.
  3. Remove the peppers from the grill and set them aside to cool.
  4. Once cool, peel off the skins and halve them. Remove the insides.
  5. In a mixing bowl, combine the cheese, garlic powder, chili powder, cumin, salt and pepper.
  6. Stuff each half of the poblano peppers with the cheese-chili mixture.
  7. Grill the stuffed peppers for 10 minutes or until the cheese melts.
  8. Drizzle with fresh lime juice and garnish with cilantro. Serve.
