Here’s simple summer recipe featuring grilled salmon and a chili-lime dressing

The hot summer months are perfect for setting up the grill and cooking outdoors. Certain foods like salmon are also in season during the summer. Here’s a quick and simple grilling recipe featuring salmon that’s sure to delight those taste buds.

The goodness of salmon

Salmon is a great source of unsaturated fats like omega-3 fatty acids. These fats are hailed for their reported benefits on heart health and brain health.

For one thing, omega-3s help reduce high blood pressure before it can lead to heart disease. Studies also found that omega-3s can protect against inflammation in the brain that might trigger the onset of dementia.

In addition, salmon is a healthier source of lean protein than red meat and processed meats.

Preparing grilled salmon salad

Salmon is a delicate fish, and poor handling can result in a ruined fillet. In most cases, cooking salmon is made challenging because of its soft, ultra-fragile meat. But this doesn’t mean forgoing salmon altogether.

Use this recipe to prepare a grilled salmon salad perfect for an outdoor meal in the summer:

Total time: 30 minutes

Ingredients:

  • limes
  • 2 small (or 1 large) fresh red or green chili
  • 1 shallot
  • 2 tablespoons fish sauce
  • Kosher salt
  • 1 pinch granulated sugar
  • 1/4 cup extra virgin olive oil
  • 1 1/4 pounds salmon fillet
  • 8 cups salad greens
  • 1 cup herbs
  • 1 cup sliced radishes or cucumbers (optional)

Preparation:

  1. Light the grill.
  2. In a small bowl, juice one lime and toss in sliced chili, half a shallot, fish sauce, salt and sugar. Let it sit for a minute to dissolve the salt.
  3. Pour in the extra-virgin olive oil and set it aside.
  4. Brush the salmon fillet with extra-virgin olive oil, then place it on a grilling basket if there is one.
  5. Grill the fish on the unlit side of the grill. Depending on the heat of the grill and the thickness of the salmon fillet, cook each side for no more than five minutes.
  6. Slice another lime and brush the cut side with extra virgin olive oil. Grill them cut-side down over direct heat for one minute or until charred.
  7. Once the salmon is cooked, transfer it onto a plate and spoon some of the dressing from earlier onto it.
  8. Cut the fillet into large but manageable pieces, and plate them up alongside the remaining ingredients including salad greens, herbs, radish or cucumber slices and the rest of the dressing.

Salmon is one of the healthiest fish to eat according to nutritionists. Incorporate it into meals and recipes to reap the benefits of omega-3s and other nutrients found in salmon.
